We carefully brew our sake using mineral-rich hard water from the Chichibu mountain system and carefully selected rice through low-temperature fermentation. The special hard water, pumped from a depth of 130 meters, contains little iron and is rich in calcium, making it suitable for use without further processing. Computer-controlled fermentation temperature ensures a dry yet aromatic and flavorful taste profile.
