How to Use
The dough is made by mixing wheat flour and saltwater, forming a base called "men-nama" (raw noodle dough), then stretched carefully into individual strands. After shaping, the noodles are gently dried using traditional methods. This product is made only in the winter season (December to February), and is crafted using a low-temperature drying method limited to specific artisans and facilities. Known for its delicate texture and refined quality, it is a top-grade somen enjoyed by many.
