How to Use
The dough is made by mixing wheat flour and saltwater to form a base called "men-nama," which is then hand-stretched into individual somen strands. After shaping, the noodles are dried slowly using traditional techniques passed down through generations. This premium somen is made using a special wheat variety called "Yumechikara" and locally grown wheat from Banshu. Known for its firm yet chewy texture and excellent flavor, the noodles are crafted using time-honored techniques to achieve an ideal balance of springiness and smoothness.
