The moment the soybean miso finishes its long aging process, a small amount of liquid known as "miso damari" accumulates on the surface.

We are a company dedicated to preserving traditional wooden-barrel fermentation in the production of naturally brewed soybean miso, while promoting Japanese food culture.
Located in Toyota City, Aichi Prefecture, we are known locally as "Masuzuka Miso." Since our founding, we have been committed to using locally grown soybeans, supporting local production and consumption, and fostering food education.
With a collection of around 400 cedar and cypress barrels, we age our miso for at least 18 months, developing its rich depth of flavor and aroma.
Our miso brewery is housed in historic buildings, including a Taisho-era schoolhouse and a former aircraft hangar from the WWII-era Naval Okazaki Airfield, which have been repurposed for production. We also offer guided tours, allowing visitors to experience the tradition and craftsmanship of miso-making firsthand.
