How to Use
Pure white radishes are braided by hand, one by one, with thin string and hung from the ceiling over burning oak wood for 3 to 5 days to dry until they are fragrant. They are pickled in rice bran and salt as the main ingredients, and the cold air in the pickling workshop, like powdered snow, enhances the deliciousness of the radishes. Our products do not use any preservatives, colorings or seasonings (amino acids, etc.), making use of only natural flavors. These pickles are characterized by a simple taste that evokes the nostalgic atmosphere of old-fashioned times gathered around the hearth. Because they are chopped (finely chopped), they can be easily incorporated into dishes.

Kimuraya is located in Yuzawa City, Akita Prefecture (formerly Kamikatsu Town), nestled in the Ou mountain range, and was founded in 1963 (Showa 38).
